Recipe 4 for 2012

Chocolate and beetroot brownies
given to me by a preschool friend's mum although it looks to be out of a SMH.

4 eggs
440g caster sugar
225g plain flour
2 1/2 tbsp cocoa
175g melted butter
1 beetroot grated (approx 180g
60g cashews, chopped (I used macadamias cause I didn't have cashews)

Beat eggs and sugar. Add flour and cocoa. Add butter. Add beetroot and nuts.
Bake 55mins @ 160C in a lined 20cm square tin.

I love the idea of beetroot and chocolate but this wasn't it. I'm disturbed by the amount of sugar in this recipe. This needs much less sugar and more chocolate. The cake did taste okay, but it could be a lot better. I need to try a different recipe.

Here's a different one. This one looks a little evil. Another reasonable looking one. Anyone out there tried this sort of thing and could recommend a recipe?
